Cooking up a new gluten free bakery in Rockhampton
IT'S not long now until the smell of freshly baked pies, pastries and bread will be floating around East St.
Friends Simone Lawrie and Keely Roberts are in the midst of building a gluten free bakery after demand in the community.
The pair decided to buy the bakery equipment from its original owner who had to close down the bakery, previously located in Berserker St, late this year.
Simone told The Bulletin social media went into a frenzy when word spread of its closing, and they decided to pick up the pieces and ensure the bakery came back better than ever.
For the past few weeks, Keely and Simone have been busy establishing Artisan Gluten Free Bakery at the new location 159 East St, and the businesswomen are on track to open next month.
"It was a good product and we wanted to keep it in the community," Simone said.
"We have views to expand the menu going forward, which will include wholesaling and also online ordering," Keely said.
Not only will the bakery cater for the entire community, specifically those suffering gluten allergies, they will be creating more jobs for the local community.
They plan to hire up to 10 staff and are excited to have the same baker employed from the previous shop, who will take on an apprentice.
"He is passionate about creating gluten free food and is constantly coming up with new and exciting ideas," Simone said.
Simone and Keely don't have gluten allergies, but say they often eat gluten free as a positive health choice and said freshly baked products tastes as amazing as they would from a regular bakery.
