How do you make the perfect cup of coffee? Ask Dermot.

FOR Dermot Connaughton, the secret to a good coffee is "passion".

And it's hard to find someone who has more than him.

"Yes, I have a coffee tree at home," he admitted yesterday.

The CQ TAFE hospitality teacher and barista will judge the first Morning Bulletin Barista of the Year competition at the TAFE's Willby restaurant on November 21.

The Bulletin Chef of the Year competition will be held on the same day.

Dermot said he would judge the four entrants on their technical skills, while other judges would critique the taste.

"They will have to make six coffees in half an hour," he said.

Dermot said they decided to introduce the category due to the growing coffee industry in Rockhampton.

DERMOT'S COFFEE TIPS

  1. Use fresh products
  2. Grind the beans yourself
  3. Have it at the right temperature
  4. Have a passion for coffee
