Rachel stays nourished and wants to helps others do the same
AS A nurse in a coronary care unit, Rachel Butler has a daily reminder of the consequences of an unhealthy lifestyle.
It's one of the reasons the Yeppoon woman is so passionate about motivating others to look after their health - and after releasing a new healthy cookbook she now has a bigger platform to do just that.
Rachel, 25, developed Nourish With The Seasons with her friend Hannah Polites, with 130 recipes focusing on natural, seasonal and local produce.
The cookbook includes substitutions so people can adapt recipes to be vegan, vegetarian, gluten-free and dairy-free, and Rachel herself is vegan.
She has even built up an online presence on Instagram by promoting her healthy lifestyle, and now has more than 70,000 followers on the social media platform.
Admittedly suffering from a sweet tooth, Rachel said her favourite recipes were the cookie dough bites, raw caramel slice and the strawberry and banana bread.
"With so much conflicting information about what's good for you and what's not, it's something nice and simple to inspire and motivate people to start living a healthier lifestyle," Rachel said.
"I did my own research and I really enjoy the way I eat, I don't find it restrictive at all... there are so many alternatives now that never would have been there back in the day.
"It's simple to make as long as you have the right ingredients there, once you start exploring that it becomes easier."
Hannah also has almost one million followers on Instagram as well as a blog where she shares content on health, style and travel.
